Getting What We Need Ourselves: How Food Has Shaped African American Life

Beginning with an examination of West African food traditions during the era of the transatlantic slave trade and ending with a discussion of black vegan activism in the twenty-first century, Getting What We Need Ourselves: How Food Has Shaped African American Life tells a multi-faceted food story that goes beyond the well-known narrative of southern-derived "soul food" as the predominant form of black food expression. While this book considers the provenance and ongoing cultural resonance of emblematic foods such as greens and cornbread, it also examines the experiences of African Americans who never embraced such foods or who rejected them in search of new tastes and new symbols that were less directly tied to the past of plantation slavery. This book tells the story of generations of cooks and eaters who worked to create food habits that they variously considered sophisticated, economical, distinctly black, all-American, ethical, and healthful in the name of benefiting the black community. Significantly, it also chronicles the enduring struggle of impoverished eaters who worried far more about having enough to eat than about what particular food filled their plates. Finally, it considers the experiences of culinary laborers, whether enslaved, poorly paid domestic servants, tireless entrepreneurs, or food activists and intellectuals who used their knowledge and skills to feed and educate others, making a lasting imprint on American food culture in the process. Throughout African American history, food has both been used as a tool of empowerment and wielded as a weapon. Beginning during the era of slavery, African American food habits have often served as a powerful means of cementing the bonds of community through the creation of celebratory and affirming shared rituals. However, the system of white supremacy has frequently used food, or often the lack of it, as a means to attempt to control or subdue the black community. This study demonstrates that African American eaters who have worked to creative positive representations of black food practices have simultaneously had to confront an elaborate racist mythology about black culinary inferiority and difference. Keeping these tensions in mind, empty plates are as much a part of the history this book sets out to narrate as full ones, and positive characterizations of black foodways are consistently put into dialogue with distorted representations created by outsiders. Together these stories reveal a rich and complicated food history that defies simple stereotypes and generalizations.

Nuggets of Gold: Further Processed Chicken and the Making of the American Diet

For McDonald's, the Chicken McNugget, the flagship product of further processed chicken, represented a once-in-a-generation innovation, a snack item that quickly evolved into a meal, spawned a legion of imitators, and gained a large share of the global poultry market. Yet, almost as soon as the McNugget made its North American debut, it quickly became the subject of opprobrium and ridicule, taking on a symbolic status among serious food connoisseurs as an indication of Americans' culinary decline and a growing disconnection between diners and the origins of the food that they ate. During a time of rising beef prices and growing health concerns regarding red meats, the Chicken McNugget was received as a lighter alternative to traditional burger meals, clean and easy to consume, popular with children, and adaptable to busy "on-the-go" lifestyles of working parents. In reassembling the rise of poultry in the United States, Nuggets of Gold presents a multilayered approach, connecting the entwined stories of workers and industrialists with restauranteurs and consumers, the former geographically moored within the South, the latter diverse and nationwide. Patrick Dixon centers further processed chicken within an analysis of the U.S. food system that demonstrates that consumers did not unwittingly succumb to a "junk food" diet but made deliberate and aspirational decisions based on conceptions of leisure, lifestyle, and bodily needs.

Food Waste, Food Insecurity, and the Globalization of Food Banks

Food banks--warehouses that collect and systematize surplus food--have expanded into one of the largest mechanisms to redistribute food waste. From their origins in North America in the 1960s, food banks provide food to communities in approximately one hundred countries on six continents. This book analyzes the development of food banks across the world and the limits of food charity as a means to reduce food insecurity and food waste. Based on fifteen years of in-depth fieldwork on four continents, Daniel Warshawsky illustrates how and why food banks proliferate across the globe even though their impacts may be limited. He suggests that we need to reformulate the role of food banks. The mission of food banks needs to be more realistic, as food surpluses cannot reduce food insecurity on a significant scale. Food banks need to regain their institutional independence from the state and corporations, and incorporate the knowledge and experiences of the food insecure in the daily operations of the food system. These collective changes can contribute to a future where food banks play a smaller but more targeted role in food systems.

One response to the challenges of climate change and energy supply has been the development of crops to be used for biofuels. Food Systems in Africa: Rethinking the Role of Markets

Rapid population growth, poorly planned urbanization, and evolving agricultural production and distribution practices are changing foodways in African cities and creating challenges: Africans are increasingly facing hunger, undernutrition, and malnutrition. Yet change also creates new opportunities. The food economy currently is the main source of jobs on the continent, promising more employment in the near future in farming, food processing, and food product distribution. These opportunities are undermined, however, by inefficient links among farmers, intermediaries, and consumers, leading to the loss of one-third of all food produced. This volume is an in-depth analysis of food system shortcomings in three West African cities: Abidjan, Côte d'Ivoire; Rabat, Morocco; and Niamey, Niger. Using the lens of geographical economics and sociology, the authors draw on quantitative and qualitative field surveys and case studies to offer insightful analyses of political institutions. They show the importance of "hard" physical infrastructure, such as transport, storage, and wholesale and retail market facilities. They also describe the "soft" infrastructure of institutions that facilitate trade, such as interpersonal trust, market information systems, and business climates. The authors find that the vague mandates and limited capacities of national trade and agriculture ministries, regional and urban authorities, neighborhood councils, and market cooperatives often hamper policy interventions. This volume comes to a simple conclusion: international development policy makers and their financial and technical partners have neglected urban markets for far too long, and now is the time to rethink and reinvest in this complex yet crucial subject.
